what is the best all round bean

My mum is opening a tea&coffee shop on a where she lives small on a small scottich island. She doesn't know much about coffee as do I so I was wondering what would the be the best beans for the job (at a reasonable as she still has to make a bit of money. Do you need different types of beans for cafetieres, expessos and cappuccinos? What's the best way to store the? How long do they keep for? How many regular coffees can you get from one regular 250g bag of beans? And finally would it be better to buy beans or grounds?
Any help & advice you give would be greatly appreciated.
