Green Eggplants

Green eggplants are not as common as the traditional purple eggplants. They are, however, sweet and delicious. You can eat them chopped up over a salad, or you can cook them. Most of the recipes you will locate that use green eggplants come from Asian cuisine. One recipe that I like to make with green eggplants is an eggplant parm. Just cut your green eggplant in to slices, dip in a beaten egg, dip in some Italian breadcrumbs, and fry in a pan of olive oil. Cook for three minutes on each side and you are done. Top with spaghetti sauce and your favorite cheese.
